Finger-Licking Good Chicken Breasts

Start by gathering all of the ingredients you will need: 1 pound boneless, skinless chicken breasts
1 bell pepper, sliced
1 onion, sliced
1 tablespoon olive oil
1 teaspoon chili powder
1 teaspoon cumin
1/2 teaspoon paprika
1/4 teaspoon salt
1/4 teaspoon black pepper
Flour or corn tortillas, for serving
Optional toppings: shredded cheese, diced tomatoes, sour cream, guacamole, cilantro
2. Preheat your grill to medium-high heat (about 375-400 degrees Fahrenheit).
3. In a small bowl, mix together the chili powder, cumin, paprika, salt, and black pepper.
4. Slice the chicken breasts into thin strips.
5. Toss the chicken, bell pepper, and onion in the olive oil, then sprinkle the spice mixture over the top. Mix everything together until the chicken and vegetables are evenly coated in the spices.
6. Thread the chicken and vegetables onto skewers. If you are using wooden skewers, be sure to soak them in water for at least 30 minutes before grilling to prevent them from burning.
7. Grill the skewers for about 8-10 minutes, turning occasionally, until the chicken is cooked through and the vegetables are slightly charred.
8. While the chicken is grilling, heat up the tortillas according to the package instructions.
9. Once the chicken and vegetables are cooked, remove them from the skewers and place them in a large bowl.
10. To assemble the fajitas, place a few pieces of chicken and some vegetables onto a tortilla.
11. Top with any desired toppings, such as shredded cheese, diced tomatoes, sour cream, guacamole, and cilantro.
12. Fold the tortilla in half to enclose the filling.
13. Serve the fajitas hot, with any additional toppings on the side. Enjoy!
