Chettinadu Kuzhi Paniyaram: A South Indian Classic

Chettinad Kuzhi Paniyaram is a savory dish from the Chettinad region of Tamil Nadu.
Ingredients
1 cup raw rice
1/2 cup urad dal
1/2 teaspoon fenugreek seeds
1 onion, finely chopped
2 green chilies, finely chopped
1/2 teaspoon turmeric powder
1/2 teaspoon coriander powder
1/2 teaspoon cumin powder
1/2 teaspoon salt
Wash and soak the rice and urad dal for at least 4 hours, or overnight
Drain the water and grind the rice, urad dal, and fenugreek seeds together into a smooth batter.
Add the onion, green chilies, turmeric powder, coriander powder, cumin powder, and salt to the batter and mix well.
Let the batter ferment for at least 6 hours, or overnight.
Heat a paniyaram pan over medium heat. Grease each depression with oil. Pour 1/4 cup of batter into each depression.
Cover the pan and cook for 2-3 minutes, or until the paniyarams are cooked through. Serve hot with your favorite chutney or sambar
